Beetroot can be used to prepare not only vinaigrette, borscht and “Herring under a fur coat”. It goes perfectly with prunes, nuts and even cheese.
1. Herring under a fur coat
This salad is the main decoration of the New Year's table. Finely chopped herring, boiled potatoes, carrots and beets, as well as finely chopped onions and eggs are laid out in successive layers. The salad is traditionally dressed with mayonnaise. Before serving, let the dish sit for a while so that the layers are well soaked.
2. Salad “Mistress”
They say that the way to a man's heart is through his stomach. In Soviet times, the “Mistress” salad was one of those that ladies, without particularly thinking about aphrodisiacs, willingly prepared for their gentlemen. It contains boiled beets and carrots, hard cheese, garlic, prunes, raisins, walnuts and mayonnaise. The salad is laid out in layers, and can be served in portions in transparent glasses.
3. Vinaigrette
Most often, vinaigrette is prepared in winter, when there is a lack of quality fresh vegetables. It consists of diced boiled beets, potatoes, carrots, as well as sauerkraut, pickles, onions and peas. All ingredients are mixed and seasoned with sunflower oil in combination with vinegar.
4. Salad with beets and cheese
A simple salad with a Caucasian accent. It contains boiled beets, a little feta cheese or feta cheese, cut into cubes, and walnuts. This salad is seasoned with vegetable oil and decorated with herbs.
5. Borscht
I didn’t eat borscht - what strength! The main soup of Ukrainian cuisine, along with cabbage soup, is distinguished by its rich burgundy color, which comes from beets. It is served with sour cream and Ukrainian bread. You can also use pampushki, garlic and lard.
6. Beetroot soup
Beetroot soup is also made from beets, but much faster than borscht. The beets are boiled and cut into cubes. Separately, you need to chop cucumbers, herbs, hard-boiled eggs and sausage. Pour all the ingredients into kefir and the soup is ready. It is served cold, so beetroot soup is most often prepared in the summer.
7. Botvinya
Botvinya is an old cold soup made with sour kvass made from beet tops. Add pureed sorrel, spinach, green onions, and nettles to it. Pieces of ice are also added to the soup, which is why botvinya is so good in summer. They can also serve it with red fish.
8. Beetroot pancakes
To prepare bright raspberry-colored pancakes, in addition to beets, you will need milk, wheat flour, a raw egg, a little sugar and salt, as well as vegetable oil for frying. The pancakes turn out to be very unusual; if desired, they can always be filled with caviar or cream cheese.
9. Beetroot and horseradish cocktail
They say that even Vladimir Putin loves a horseradish and beetroot cocktail. You can prepare a similar one from boiled beets, green apples, raw carrots, and the juice of half a lemon. Place all ingredients in a blender, then add 1/2 cup of water and 1 teaspoon of grated horseradish, beat thoroughly until smooth. The drink perfectly cleanses the blood and is good for the liver.
10. Pickled beets
This recipe is for lovers of winter preparations. Small beets are best. They need to be washed and boiled until cooked. Then cool, peel and cut into cubes or strips. Place onions, beets, and peppercorns cut into cubes or rings in a sterile jar. The marinade is prepared separately: pour water, vinegar into the pan, add salt, bay leaf, sugar and bring to a boil. Pour the cooled marinade over the vegetables in the jar and close. The preparation must be kept in the refrigerator for a day, and then stored in a dark, cool place all winter.
